Taste the Legacy: Weihenstephaner Hefeweissbier Review

Weihenstephaner Hefeweissbier is widely considered the global benchmark for the traditional Bavarian wheat beer style.

Brewed at the Bayerische Staatsbrauerei Weihenstephan, it carries the prestige of coming from the world’s oldest brewery. While the monastery was founded in 725, official brewing began in 1040 when Abbot Arnold received a license to brew and sell beer.

Since 1852, it has been the center of world brewing technology. It operates in close collaboration with the Technical University of Munich, serving as a state-of-the-art research facility where brewmasters from around the globe are trained.

I had the pleasure of traveling throughout Germany a few times over the years and ducked into storied beer halls such as the Hofbrauhaus, Lowenbraukeller, and Paulaner, but my first experience drinking a weissbier was purchased at a grocery store located in Garmisch that had a fabulous selection of weissbiers.

About Weihenstphan Hefe Weissbier

  • Style: Weissbier which is a traditional South German top-fermented wheat beer
  • ABV: 5.4%
  • IBU: 14
  • Appearance: Pale straw to dark amber with a white foaming head.
  • Flavor Profile: Features banana and cloves (it’s the yeast that contributes to the hint of cloves) with a light malt sweetness.
  • Aroma: Notes of vanilla, banana, and cloves.
  • Hops: Typically a combination of Noble German varieties such as Hallertau, Tettnang, or Spalt.
  • Ingredients: Malted wheat, pale pilsner malt, and a top-fermenting specialized ale yeast. The yeast strain is commercially available as Wyeast 3068 Weihenstephan Weizen or White Labs WLP300.
  • Mouthfeel: Medium to light mouthfeel that is creamy in nature, mild carbonation with a fruity yeast finish.
  • Food Paring: Pairs best with delicate seafood, mild sausage (ohne Sauerkraut), salads, soft cheeses, and citrus-forward dishes.

Overall Impression: This weissbier has a distinct profile that includes a unique nose, banana and clove flavors (a product of specialized yeast), all combined with a creamy and low bitterness finish that makes for an exceptionally refreshing brew.

  • Burrocreek: Having tasted my way through Austria and Germany on several overseas trips, this widely-available beer is as close as it gets to perfection for the style. An outstanding beer with wonderful honey notes in addition to a perfect blend of the usual banana, clove, etcetera.
